Jaldi Potato
Ing: 500 gms potatoes, Off the counter Garam Masala, Amchur, Cumin powder, Coriander powder , Chilli powder and turmeric powder, salt and oil to taste.

Mix 500gms potatoes, cut into small pieces with oil, ½ tsp cumin powder, salt to taste, turmeric powder, ½ tsp coriander powder and chilli powder. Place the mixed ingredients in a microwave dish and cook covered at High for 5 minutes.

Stir, and cook covered, at medium for 7 minutes. Mix in the garam masala and amchur and cook covered, at medium for 1 minute. Serve garnished with cut coriander leaves.Sit with a hot bowl of potatoes on the window sill, enjoying the rain.


Badam Halwa
Ing: One cup of peeled badam; 1 ½ cup Sugar ; ½ a cup ghee

Grind a cup of peeled badam to a smooth paste with the help of some milk. Powder one and half cup of sugar, or if there is no mixie, add a quarter cup of water to the sugar, in a microwave dish, and keep it on high for 5 minutes or till the sugar dissolves. Now thoroughly mix the badam paste with the powdered sugar or sugar syrup, as the case may be, and cook it on high for 15 minutes.

Every now and then stir the mix. After 15 minutes, remove from microwave. Heat a kadai in a stove, add a little ghee , turn in the badam sugar mix and stir briskly till the whole mixture starts leaving the side of the kadai. This will take a few minutes. The badam halwa is ready. Serve in an attractive bowl, garnished with shredded badam.


Microwave Potatoes
Ingredients:
4 to 5 medium potatoes
3 Tbsp. butter
Dash of garlic salt
Dash of parsley
Dash of Parmesan cheese

Peel and wash potatoes.
Cut in chunks.
Put in micro wave dish with small amount of water. Cook 5 to 6 minutes on High, then turn and stir potatoes around. Cook 5 to 6 minutes more on High. Add butter to potatoes, by dropping small pieces on potatoes. Sprinkle garlic salt and parsley and cheese over potatoes. Garlic salt is made by grinding 5-6 cloves of garlic with a little bit of salt. Cook 5 to 6 more minutes on medium. Make sure butter has melted and potatoes are tender.

Microwave Spiced Nuts
Ingredients:
1/4 cup butter
1/2 cup brown sugar
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 tablespoons water

Melt butter in a 4 quart glass casserole dish in the microwave. Stir in the brown sugar, nutmeg, cinnamon and water. Microwave on high for 1 minute. Stir in the nuts so they are well coated. Microwave for 4 to 5 additional minutes on high, stirring every minute. Spread cooked nuts out onto parchment or waxed paper to cool.


Tips for microwave cooking with potatoes

The easiest way to cook a baking potato in the microwave is directly on the microwave oven tray without any utensil at all

Moisture will condense on the glass oven tray as potato cooks. To avoid superheating the moisture, which may cause tray to crack, always wipe tray dry before putting another utensil in the oven and cooking.
