Gyakho, a soup made with vegetables and meat, brought to simmer over a charcoal fire; or Pakku, a mutton curry served with rice. Food that is fermented is very much a part of the cuisine of Sikkim. A popular fermented item is the Chhurpi, a dairy product that is fermented and made of cow milk. It has a mild, sour taste and is added to soups and pickles.
