We’ve brought for you some easy, fun, healthy and creative comfort food options – from homemade pizza to the perfect virgin mojito – that you can make for yourself or your loved ones. So take a break from the mundane, turn off the bad news on TV, roll up your sleeves, and let’s get cooking with these feel-good lockdown recipes!
Carrot-Apple Sandwich:
Start with this easy dish. Grate one carrot and add chopped raisins, 1/4 tsp fennel powder, one grated apple, one tsp mayonnaise and salt. Mix all the ingredients properly. Take two bread slices and generously apply butter on both sides. Spread the prepared mixture on one slice, and cover it with the other. Your healthy carrot-apple sandwich is ready!
Veggie Pizza:
Take a pizza base and spread some pizza or tomato sauce on the surface, leaving the sides alone. Top the base with tomatoes, onions, olives, jalapenos, capsicum, corn and any other topping of your choice. Spread grated cheese and subsequently sprinkle Italian seasoning or mixed herbs. Bake it in a preheated oven at 200-250 degree Celsius for nearly 12-15 minutes. Slice the pizza and serve hot.
Grilled Veggie Yum Pasta Salad:
One of the easiest lockdown recipes, this pasta salad is healthy and is sure to tantalise your taste buds. Boil one cup of pasta first. Keep it aside. Grill a 1/2 cup of zucchini and one cup of bell peppers. Then, add two finely chopped tomatoes and salt and pepper to taste. Toss pasta with vegetables. Serve it hot with chilled mixed fruits juice.
Strawberry Popsicles:
Cool and refreshing, strawberry popsicles are sure to satisfy your cravings for comfort food. First, blend 1 pint of fresh strawberries until they are pureed. Then, add two tbsp sugar dissolved in 2 tbsp of warm water. Properly stir the mixture and add yoghurt according to taste; stir again. Pour the prepared mix in popsicle moulds and refrigerate for 5 hours. Carefully take out the prepared popsicles and serve immediately.
Nutella Brownies: Tasty and easy to make, Nutella brownies are a perfect example of comfort food. Take 2-3 eggs in a bowl and add Nutella and flour. Beat the mixture properly for nearly a minute. Apply butter to a baking tray and spread the mixture evenly. Bake at 350-degree Fahrenheit for nearly 10-12 minutes. Take out the brownies and top it with your favourite ice cream. Your dish is ready to serve.
Peanut Butter and Apple Sandwich: Looking for an easy recipe that is both healthy and satiating? Peanut butter and apple sandwiches come to the rescue! Take 2 slices of whole wheat bread and spread 1 tbsp of peanut butter on each of the slices. Take an apple, peel it, and shred it. Add the shredded apple onto the applied peanut butter. Cover one slice with another and your sandwich is ready to consume.
Virgin Mojito: Take 30ml club soda and 30ml lemon juice. You would also require 8-9 mint leaves, two lemon wedges as well as 20ml sugar syrup. Take a shaker and add lemon wedges, sugar syrup, mint leaves and lemon juice. Take a wooden pestle to crush all these ingredients. Add 8-10 ice cubes and shake vigorously till all the ingredients release the flavours. Pour this mix in a tall glass and add club soda to fill the same. Garnish with mint leaves and serve immediately.
Chocolate Ice Cream: Take one-fourth cup milk in a pan and add a half-cup of brown/regular sugar. Keep the flame low and stir continuously till the sugar dissolves. Once done, turn off the stove and add 1/2 cup cocoa powder. Combine the mixture very well and add 1/2 cup condensed milk. Now, add one tsp of vanilla extract. Set aside the mixture and allow it to cool at room temperature. Take 2-2.5 cups of chilled cream and whip it using an electric beater till you get stiff peaks. Add the chocolate mixture to this cream and fold it with light hands. Finally, transfer this mixture to a container and place it in the freezer for 8-9 hours. Scoop out the ice cream and serve immediately. You can also add chocolate sauce to make it more delectable.
