Poha can be made using ingredients like flattened rice flakes, bread or even oats. Begin with heating oil in a pan and adding mustard seeds. Once they get crackling and spluttering, toss in some sliced onions and cook them till translucent. Add in the turmeric powder, red chilli powder, salt (as per taste) and chopped tomatoes. Cook till the tomatoes turn soft. Add the flattened rice/bread cubes/oats with some water and let the poha simmer in a low flame till the water gets absorbed. You can top this up with crushed peanuts, pomegranate and chopped coriander.
You can make pancakes using 6-7 ingredients to as little as 2 ingredients too. Savoury to sweet, your stack of golden-brown pancakes can be any flavour that you want! For something super easy, you can make pancakes by mashing 4 over-ripe bananas, adding 2 eggs and beating them together to make a batter. These won’t be fluffy but they are sugar-free and gluten-free so make sure to eat these pancakes guilt-free! Top it up with honey (healthier alternative to maple syrup) and fresh fruits!

Since it is really hot and humid right now, opt for ingredients that will keep your body cool like watermelon, chia seeds, oranges, etc.
That idli batter can double up as dosa batter! All you need to do is heat up some oil on a flat pan and turn it around so that the oil spreads all around. Brush it with some water to get rid of any excess oil. Add a dollop of the batter in the middle and start spreading it in a circular motion with the back of the spoon. You will need to be a little quick so that the batter doesn’t stick to the pan before flattening it properly. Let it cook for a few minutes and once you see it browning up, try removing it from around the edges and slowly make your way to the middle. For something more filling, you can add various kinds of stuffing, ranging from spiced potatoes to fresh veggies to cheese and egg to shredded meat. Whip up some coconut chutney and enjoy your healthy breakfast during home quarantine!
