Ingredients needed for making Bread Upma

  •     Bread
  •     Oil
  •     Mustard seeds
  •     Cumin 
  •     Urad dal
  •     Curry leaves and green chillies
  •     Ginger
  •     Asafoetida (Hing)
  •     Onions and tomatoes (finely chopped)
  •     Lemon juice
  •     Coriander (finely chopped)
  •     Dried spices – red chilli powder, garam masala powder, turmeric powder 

Method for making Bread Upma

  •     Heat oil in a pan, add the mustard seeds, cumin seeds and urad dal and sauté for about one minute 
  •     Add the ginger, green chillies, and asafoetida and curry leaves and sauté for a couple of minutes
  •     Put in the chopped onions and fry them until they turn brown and soft
  •     Next, add tomatoes in the pan and all the dried spices. Give all the ingredients a good stir and mix them. Allow the tomatoes to cook until they turn soft 
  •     Add the bread (cut into small pieces) and mix well with other ingredients
  •     Allow the bread to soak in all the flavour and cook it with a lid on a low to medium flame for about 2-3 minutes
  •     Squeeze some lemon juice on top, give it a good mix, add the chopped coriander and serve

It is one of the most simple breakfast recipes in India and is best served with a cup of hot masala or herbal tea.

Beetroot Paratha

Beetroot Paratha is a healthy twist to the classic north Indian delicacy and everyone’s favourite breakfast dish – Paratha, which is usually made with wheat flour, potato, cabbage or radish. It is a quick Indian breakfast recipe that everyone in your family will love. 

Time take for making Beetroot Paratha

30-40 minutes

Ingredients needed for making Beetroot Paratha

  •     Wheat flour
  •     Beetroot puree 
  •     Carom seeds
  •     Spices – red chilli powder, turmeric powder, garam masala powder and amchur (optional)
  •     Mint leaves (finely chopped)
  •     Desi Ghee or oil
  •     Coriander leaves

Method for making Beetroot Paratha

  •     To make the beetroot puree, peel the beetroot, chop them in small pieces and cook them in a bowl of water for about 5-7 minutes until the vegetable becomes soft
  •     Turn off the heart and once cool, puree the beetroot in a blender and keep it aside
  •     In a big bowl, add the wheat flour, the puree, coriander leaves, mint leaves, and all the spices together and also add a pinch of salt 
  •     Mix all the ingredients and make a dough by adding a small amount of water. Apply a couple of spoons of ghee or oil on the dough and let is rest for 10 minutes
  •     Make the dough into medium-sized balls and roll them flat. Then fold the dough from all sides and roll it flat again
  •     Sprinkle some ghee and dry wheat flour and roll into a thick square-shaped paratha
  •     Heat the paratha on a tawa on medium heat and let it cook on one side first and then flip to cook on the other side 
  •     Drizzle some ghee on both sides and let it cool until you have nice golden spots on both sides

You can serve Beetroot Paratha with pickle, or yoghurt.

Moong Dal Cheela

Cheela is a popular breakfast item in India, especially in the northern states. It is essentially a savoury pancake that is packed with essential nutrients like proteins. 30 minutes

Ingredients needed for making Moong Dal Cheela

  •     Yellow Moong Dal
  •     Onions, tomatoes, green chillies, ginger (all finely chopped)
  •     Coriander leaves
  •     Spices – cumin seeds, turmeric powder, red chilli powder
  •     Oil

Method for making Moong Dal Cheela

  •     Rinse the moong dal a couple of times and leave it in water for soaking for at least 4-5 hours or overnight
  •     Drain the water and make a batter by blending the dal along with ginger, green chillies, and cumin seeds. You can use a little water while blending to make a smooth batter
  •     Transfer the batter in a bowl, and add onions, tomatoes and coriander leaves, turmeric powder, red chilli powder and salt and mix it well. Leave the batter to rest for about 10 minutes
  •     Pour the batter over a heated tawa or a non-stick pan over medium heat, spread it evenly over the tawa in a circular motion to form a thin cheela.  Drizzle a few drops of oil or ghee over it and around the edges to prevent the batter from sticking to the tawa
  •     Cook on each side for about one to two minutes until it turns golden brown

You can serve the Moong Dal Cheela with freshly made mint or coconut chutney. You can also have it with pickles. Include a cup of coffee or tea to make the breakfast even more special and tastier. It is one of the simplest breakfast Indian recipes that can never go wrong. 

 

Neer Dosa

Dosa is a national favourite. It is a south Indian delicacy that almost every Indian loves. There are different types of Dosas from the traditional Rava Dosa to the modern and fusion ones like Schezwan Dosa. But have you heard of Neer Dosa? It is a popular breakfast in south India, especially in Tamil Nadu and Karnataka. It looks like a crepe and is made of rice batter.

35-45 minutes

Ingredients needed to make Neer Dosa

  •     Rice
  •     Water
  •     Salt 
  •     Oil

Method for making Neer Dosa

  •     Rinse the rice well and soak it in the water overnight
  •     In the morning drain the water and grind it in the blender with little water until you get a smooth paste
  •     Transfer the paste to a mixing bowl, add two cups of water and salt and mix well until you get a runny consistency
  •     Heat the tawa or non-stick pan and apply ghee or oil
  •     Once the tawa is hot, pour a ladleful of the rice batter from the outer edges and move towards the centre to form a thin and round Dosa. The batter will spread on its own due its consistency 
  •     Drizzle some oil or ghee around the edges and cover the tawa with a lid and cook it for about 1 minute
  •     Once the edges start to leave the side of the tawa you can flip it and cook it for another minute

Serve the dosa with a bowl of piping hot sambhar, and chutney of your choice. Coconut and tomato chutney pair well with the dosa.
