Indian Mackerel, or Bangada, as it is called in Hindi, is used in various seafood recipes, especially in Goan cuisine. One such famous Goan recipe is Mackerel Recheado. Recheado is a traditional spicy, sour, and slightly sweet Goan masala. It is mainly used as a marinade or stuffing for fish like Mackerel, pomfret, and squids. The zingy flavour of the masala comes from the use of chillies, vinegar, ginger, and garlic.

Ingredients Needed for Mackerel Recheado

  • Mackerel fish (2 nos)
  • Goan red chillies (100 gm)
  • Toddy Vinegar (100 ml)
  • Cinnamon sticks, peppercorn, cloves (5 gm)
  • Ginger and garlic (10 gm)
  • Bay leaves (2 gm)

Method for making Mackerel Recheado

  • Soak the chillies in toddy vinegar for about 8 hours
  • Grind the soaked chillies with other spices to make a smooth paste
  • Clean and slit the fish and marinate it with the chilly and spices masala in the gashes
  • Let the fish sit in the marinade for about 10-15 minutes 
  • Heat oil in a cooking pan and shallow fry the fish on both sides till its golden brown 

About Mackerel Recheado 

You can make the Recheado masala paste and store it in the freezer for later use. The vinegar in the paste acts as a preservative, and it stays good for a long time. If you or any of your family members don’t like seafood, you can use the paste as a marinade for chicken. Many Goans even use it to marinate potatoes and mushrooms and shallow fry the vegetables.
