Rogan Josh

Made of mutton, this dish is red in colour thanks to ingredients like red peppers and tomatoes. It is a delicious lamb dish of Persian origin. Rogan means oil and Josh refers to medium heat. Richly made with tomatoes, onions, spices and dry fruits as accompaniments to the fried meat cubes, this is one of the most succulent and popular dishes among Kashmiri food.

Vegetarian Dishes

Dum Aloo

A simple yet delicious dish made of small potatoes cooked in yogurt and spices, ginger-garlic paste, chilli powder, and fennel seeds, it can be had with any kind of Indian bread.

Modur Pulao

This is a vegetarian, sweetish pulao in which rice is slow-cooked with milk and sugar, and then garnished with dry fruits. This famous dish and usually makes an appearance during Kashmiri festivals.

Kashmiri Dum Aloo

Lyodur Tschaman

Lyodur Tschaman is a rich gravy dish with chunks of cottage cheese. Lyodur means yellow (in this case brought about by turmeric) and tschaman is cottage cheese. Laden with cream, spices, and Kashmiri chillies, this dish proves that Kashmiri food is rich and delicious.

Kashmiri Kheer

Aromatic Basmati rice is cooked in milk with sugar, cardamom, saffron, almond, coconut, raisins, and saffron. It is served chilled and is the perfect way to end a rich Kashmiri meal.
