To experience the authentic cuisine, all you need to do is book a stay at a Kashmir resort.
For example, choose a Srinagar resort or a houseboat. The latter, in fact, is the best way to fill your stay with absolute delight and tranquillity.
Kashmiri food is predominantly non-vegetarian but also comprises a few lip-smacking vegetarian dishes. Meat and rice are the staple food of the typical Kashmiri local. Cooked with home-grown dry fruits and spices, it is little wonder that Kashmiri food is fragrant and famous!
Here are some prominent dishes from Kashmiri cuisine:
Shab means night and deg means cauldron or cooking pot. This is a main-course dish made of deep-fried balls (koftas) of meat and papaya, and deep-fried roasted turnip, all cooked in delectable spices such as cinnamon, garlic, ginger, clove, cardamom, and saffron. It is cooked overnight in the sealed deg for the ingredients to blend and create a unique, flavourful dish the following day.
This is another traditional non-vegetarian Kashmiri dish made of minced meat koftas floating in a stock made of yogurt and spices. The sprinkling of saffron towards the end makes for the most alluring aroma and is sure to tantalise your taste buds!
Made of mutton, this dish is red in colour thanks to ingredients like red peppers and tomatoes. It is a delicious lamb dish of Persian origin. Rogan means oil and Josh refers to medium heat. Richly made with tomatoes, onions, spices and dry fruits as accompaniments to the fried meat cubes, this is one of the most succulent and popular dishes among Kashmiri food.
A simple yet delicious dish made of small potatoes cooked in yogurt and spices, ginger-garlic paste, chilli powder, and fennel seeds, it can be had with any kind of Indian bread.
This is a vegetarian, sweetish pulao in which rice is slow-cooked with milk and sugar, and then garnished with dry fruits. This famous dish and usually makes an appearance during Kashmiri festivals.
Lyodur Tschaman
Lyodur Tschaman is a rich gravy dish with chunks of cottage cheese. Lyodur means yellow (in this case brought about by turmeric) and tschaman is cottage cheese. Laden with cream, spices, and Kashmiri chillies, this dish proves that Kashmiri food is rich and delicious.
Kashmiri Kheer
Aromatic Basmati rice is cooked in milk with sugar, cardamom, saffron, almond, coconut, raisins, and saffron. It is served chilled and is the perfect way to end a rich Kashmiri meal.
Apart from the natural beauty and the accompanying serenity, the delicious cuisine is one more reason to plan a family holiday to Srinagar. Enjoy a cosy and comfortable stay in a Club Mahindra houseboat in Srinagar for an experience like no other.
