While the idea of eating a vegan diet may seem appealing to many, some people believe that vegan diet does not have many options and that cooking a vegan meal at home can be daunting. Not to mention, vegan cuisine has a reputation of being boring and bland. 

The truth, however, is vegan meals usually use delicious sauces, aromatic spices and all kinds of healthy substitutes that make your meal tasty, satisfying, and wholesome. From desserts to salads and curries, you can make a vegan dish every day and enjoy healthy eating.  

With World Vegan Day around the corner, which is celebrated on November 1, you can try making some of these tasty and healthy vegan recipes at home. These recipes are specially curated for you to give you a fair idea that vegan dishes too are tasty and you can make with regular ingredients available at home.  

Recipe 1

Goan style Vegan Meat Chilli Fry

Ingredients needed for Goan style Vegan Meat Chilli Fry

  •     3 medium-sized banana peeps
  •     Chilli, cumin, turmeric powder (1/4 teaspoon)
  •     Pepper powdered (1/2 teaspoon)
  •     Soya sauce (1 tablespoon)
  •     1-2 medium-sized onion (finely sliced)
  •     2 small chillies and garlic (finely chopped)

Method for making Goan style Vegan Meat Chilli Fry

  •     Cut the ends of the banana peels, and with a fork or teaspoon remove the inner strings. 
  •     Soak the peels in warm water with one spoonful of baking soda for about 10 mins. This will help remove the excess pesticide residue (if any). 
  •     Take the soaked peels and scrape them with a form to form the vegan meat shreds, cut them into half and keep aside.
  •   In a cooking pan, add some oil, and sauté the onions until it becomes soft and brown. 
  •     Add the garlic, chillies and the rest of the ingredients, add water and let them cook until the banana peel cooks completely.  
  •     Serve the goan style vegan beef chilli with some goan bread or pao or rice. 

Recipe 2 

Eggplant Vindaloo 

Ingredients needed for Eggplant Vindaloo  

  •     Sliced eggplant
  •     Onions (finely chopped)
  •     Goan recheado masala
  •     Water 
  •     Salt to taste

Method for making Eggplant Vindaloo 

  •     Heat oil in a cooking pan, and sauté the onions. 
  •     Add the reacheado masala and cook the onions for a few minutes until. 
  •     Add water as necessary to loosen the gravy and then add the eggplant slices
  •     Let the eggplant cook until it becomes soft
  •     Lastly add a pinch of salt to bring out the flavours, stir well and serve 

Recipe 3 

Banana and Peanut butter Ice cream

Ingredients needed for Banana and Peanut butter Ice cream

  •     Medium-sized frozen bananas (5 no)
  •     Homemade peanut butt (1/2 cup)

Method for making Banana and Peanut butter Ice cream 

  •     Add the frozen banana slices and the peanut butter in a blender or mixed and blend together until smooth.
  •     Transfer the mixture to a jar, garnish it with some roasted nuts, or a swirl of extra peanut butter. 
  •     Freeze it overnight or at least for 4-5 hours and enjoy having a healthy vegan ice cream 

Recipe 4 

One-minute Brownie

Ingredients needed for One-minute Brownie 

  •     Cocoa Powder (2 tablespoon)
  •     Jaggery Powder (2 tablespoon)
  •     Oat flour (2 tablespoon)
  •     Vegetable/olive oil (1 tablespoon)

Method for making One-minute Brownie

  •   Take all the dry ingredients (cocoa powder, jaggery powder, oats flour) in a microwave friendly mug or cup, and mix them together well.
  •     Add the olive/vegetable oil and mix well until there are no lumps. 
  •     Pop the mug in the microwave for one minute and enjoy the delicious brownie. It would be a perfect sweet treat after a delightful Sunday lunch. 

Recipe 5

Roasted Cauliflower Tacos

Ingredients needed for Roasted Cauliflower Tacos

  •     Olive oil (2 tbsp)
  •     Fresh lime juice and lemon wedges
  •     Honey (1 tsp)
  •     Tomato paste (1 tbsp)
  •     Coriander, chilli and cumin powder (1/2 tsp)
  •     Medium-sized cauliflower (cut into small florets)
  •     Small tortillas (as needed)
  •     Coriander (finely chopped)

Method for making Roasted Cauliflower Tacos 

  •     In a large mixing bowl, add lime juice, and honey. Give them a good whisk.  
  •     Add the tomato paste and the spices and them all well together.  
  •     Put in the cauliflower florets and coat them with the mixture on all sides.
  •     Arrange the cauliflower on a baking tray and roast it in a preheated oven at 425 degrees F for about 15-20 minutes.
  •   Spoon the cauliflower into tortillas, add coriander on top and serve with lime wedges
