Daal Baati Choorma- A dish consisting of roasted wheat balls served in a lentil’s gravy. The lentils are a mix of different pulses and the dish is served with desi ghee and choorma. Side dishes might also include buttermilk and garlic chutney.

Papad Sabzi- This is a traditional Rajasthani/Marwari dish that is actually a curry made of Papad and Fenugreek seeds. Rajasthanis cook this with green onion and may even add wadi according to their taste.

Rajasthani Thali- An old Indian custom of having a meticulous arrangement of curries, bread, pickles, and desserts all in one huge plate. It is a sort of therapy in its own and offers a brilliant taste of local cuisine, all-in-one.

Gatte ki Sabzi/Pulao- This dish consists of small gram flour dumplings having been either added to a yoghurt curry or rice.

Safed Maans- It is a lamb-based gravy with a luscious texture from ingredients such as fresh cream, yoghurt, khoya, and dry fruits. Added to these are rich quantities of cloves, cinnamon, cardamom, and whole dry red chillies, milk and cream, it turns out to be royal in every sense.

Laal Maans- This is another lamb-based gravy that is best enjoyed with Indian bread. In contrast to the safed maans, this one is fiery hot and uses the Rajasthani mathania chillies. Red in colour and spicy in taste and loaded with garlic, this has been a local favourite for ages.

Mawa Kachori- This Rajasthani sweet is made from sweetened khoya and dry fruits, is typically fried in desi ghee and dipped in sugar syrup, making it an irresistible delicacy.

Diljaani- This delectable dessert is made of boondi and smothered in orange juice. Sometimes is also served with tiny gulab jamuns and is a local favourite.
