The combination of creamy avocado and crunchy cucumbers tastes superb. Adding lemon juice, olive oil, and fresh coriander to the dressing boosts the flavour and leaves a long-lasting taste on your palate. While the original recipe by Chef Alex Dias, the Executive Chef at Club Mahindra Varca resort in Goa, does not include onions, and tomatoes, you can add them to your salad to add a bit of freshness and another layer of flavour.

Ingredients Needed for Avocado, Cucumber and Coriander Salad Recipe

  • Avocado (100 gm)
  • Cucumber (100 gm)
  • Mixed lettuce (80 gm)
  • Mixed pepper (80 gm)
  • Coriander (50 gm)
  • Lemon juice (50 ml)
  • Olive oil (50 ml)
  • Pepper (5 gm)

How to Make Avocado, Cucumber, and Coriander Salad Recipe

  • Peel the cucumber and avocado and cut both vegetables into long stripes 
  • Tear the lettuce leaves, wash them in running water, and keep them aside
  • Slice the peppers and keep them aside
  • Prepare a dressing for the salad by mixing lemon juice, olive oil, and chopped coriander
  • Combine all the cut vegetables in a big bowl, pour the dressing on top, mix well and serve
