About Goan Pork Sausage and Black Eyed Bean Stew

The Goan Pork Sausage and Black Eyed Bean Stew is a classical reflection of the Portuguese influence on Goan cuisine. During the colonial era, the Portuguese rulers brought chorizo sausages to Goa and made curries using local vinegar, chillies, and other spices. This Pork Sausage and Black Eyed Bean stew is heavily influenced by one of those Portuguese dishes.
