Ingredients You’ll Need

  • Wheat flour – 400 g
  • Foxtail millet – 200 g
  • Salt – as per taste
  • Red chilli powder – 1 tsp
  • Ghee – 15 ml
  • Water – as required

Method of Preparation

  1. Preparing the Millet Base

  • Wash and cook the foxtail millet in just enough water until it turns soft and fluffy.
  • Let it cool to room temperature before mixing it into the dough.

  • In a large bowl, combine wheat flour, cooked foxtail millet, salt, and red chilli powder.
  • Gradually add water and knead until you have a smooth, pliable dough.
  • Drizzle a little ghee over the dough and knead once more for softness.
  • Cover and let it rest for 15–20 minutes.
  1. Rolling and Cooking the Paratha

  • Divide the dough into equal portions and roll each into a ball.
  • Using a rolling pin, flatten each ball into a circular paratha.
  • Heat a tawa (griddle) over medium heat and place the rolled paratha on it.
  • Cook on one side, flip, and apply a light layer of ghee.
  • Repeat for the other side until golden spots appear and the paratha is cooked through.
