Pancakes are a favourite breakfast item loved by people of all ages. It is a flat cake, often thin, and made of flour, milk, eggs, and butter. The size and shape of the pancake vary worldwide. In the UK, pancakes are unleavened and look more like crepes. In North America, the pancakes are fluffier and thicker.
It is a great dish to have any time of the day; it is light, healthy, and fulfilling. Adding fruits and nuts make the pancake tastier, add natural sweetness, and allow you to enjoy a guilt-free sweet treat. You can try making this simple recipe by Chef, Alex Dias, Executive Chef at Club Mahindra resort in Goa.
In the UK and Commonwealth countries, there is Pancake Day, celebrated on the Tuesday before the start of Lent, the 40 days of abstinence before Easter. The main idea of this day was to empty the pantry of all sugar, fats, and eggs to resist temptation and reduce waste.
· Flour (150 gm)
· Eggs (2 no)
· Butter (50 gm)
· Milk (100 ml)
· Mixed dried fruits (100 gm)
· Mixed nuts (100 gm)
· Icing sugar (50 gm)
· Honey (10 gm)
· Cinnamon powder (5 gm)
· Baking powder (5 gm)
· Fruits – apples, pears, oranges, pineapple (150 gm)
· Prepare the batter of the pancake by mixing the flour, eggs, milk, and baking powder
· Stew the fruits with butter, orange juice, and cinnamon powder
· Make the pancakes, add the stewed fruits, dried fruits, and nuts, and serve
While the Romans invented the Pancakes in the 1st Century, and it is still widely consumed in the US and Europe, India has many styles of pancakes. The taste and name of the Indian pancakes vary from one state to another and is based on the ingredients used.
For example, in the north Indian states, Pancakes are known as Cheela, and they are mostly savoury and made of gram flour, potatoes, chillies, and cottage cheese. In south India, pancakes are mostly made of fermented rice flour and black lentils (urad dal), known as dosa, appam, and uttapam.
