Ingredients needed for Vegetable Xacuti Recipe

  • Vegetables – carrots, cauliflower, green beans, potatoes (100 gm)
  • Grated coconut (50 gm)
  • Coriander seeds (10 gm)
  • Spices – cinnamon sticks, cardamon, bay leaves (5 gm)
  • Ginger and garlic (10 gm)
  • Fined diced onions (50 gm)
  • Dried red chillies (10 gm)
  • Turmeric, chilli, garam masala powder (5 gm)
  • Poppy seeds (10 gm)
  • Coconut milk

How to make Vegetable Xacuti Recipe

  • Dice all the vegetables into small pieces, and blanch them
  • Dry roast the grated coconut with all the dry spices
  • Grind the roasted coconut with ginger and garlic and keep it aside
  • Heat oil in a cooking pan, and sauté the onion
  • Once the onions turn golden brown, add the grinded coconut and spices masala.
  • Let the masala cook for about 10-15 minutes and then add the vegetables and coconut milk and mix well.
  • Let the vegetables cook for a few minutes.
  • Check the seasoning and serve!

Xacuti or Shagoti, as the locals in Goa call it, originated from the Harmal region in Pernem Taluka. The local fishermen's community prepared gravy with black pepper, turmeric, onion, nutmeg, cinnamon, cloves, poppy seeds, and toasted coconut and served with the fresh catch of the day or chicken.
