This simple recipe is by Chef Alex Dias, the Executive Chef at our Club Mahindra resorts in Goa. This easy-to-cook recipe is a perfect breakfast option. You may also have it as an evening snack or if you wish to have a healthy but light dinner.

Ingredients Needed for Making Egg Potato and Bean Salad


· Boiled potatoes

· Boiled eggs

· Beans

· Black olives

· Chopped onions

· Lettuce

· Olive oil

· Lemon juice 

· French mustard


Method for making Egg Potato and Bean Salad


· Cut the boiled potatoes and eggs into small pieces 


· Put the eggs and potatoes in a large mixing bowl


· In a separate bowl or pan, make the dressing by mixing olive oil, lemon juice, and French mustard


· Pour the dressing over the eggs and potatoes and mix well


· Garnish with finely chopped mint or coriander leaves and serve!
