Well, the Coorgis, who were originally a warrior tribe, have always been non-vegetarian, as they generally only eat whatever can be found locally. This means that they started eating a lot of pork, which they got from the wild boars that roamed through the forests. Of course, this wasn't the only thing they ate. Bamboo shoot, jungle mango, and jackfruit, are also eaten whenever they are in season, and mostly, they're prepared in a curry form too.
Most dishes here are prepared in a Kachampuli sauce. This is made from the concentrated juice of the Kachampuli fruit, and most Coorgi houses will have the paste ready to preserve their chicken, mutton, and pork. Typically, you'll find that cooks here prefer to use green chillies instead of the red ones, as they cut more fat and are believed to be healthier.
Rice is another staple in a Coorgi meal. You'll find most of your dishes will be served with traditional rice dumplings, steamed rice, or rice-based breads. Wheat and lentils aren't as popular here as they are in the rest of India, and are only being introduced to the area now.
