Biryani, just the mention of the name can make anyone’s mouth water. An evergreen classic, the dish needs no special introduction. It is believed that the aromatic, and flavourful dish was introduced in India by the Mughals, and it initially flourished in notable places like old Delhi, Lucknow, and Hyderabad and its popularity later spread to the rest of India. A wholesome meal, biryani fulfils your tummy, and feed the soul. 

India boasts different kinds of Biryani with each state having its own unique version. Shayya Biryani is one such unique type of Biryani that is made of vermicelli, instead of Basmati rice. Compared to other popular types of Biryanis in India, it is low on spice count, but tastes equally good. Another highlight of this Biryani is its cooking method, it does not involve using the Dum; here the meat is cooked first, and the vermicelli is added later for it to absorb all the flavours. 

 

Preparation time of Shayya Biryani: 45 minutes 

Ingredients needed for Shayya Biryani Recipe

  •     Vermicelli
  •     Ghee
  •     Onions, tomatoes (finely chopped)
  •     Green chillies
  •     Ginger-garlic paste
  •     Turmeric and chilli powder
  •     Yoghurt
  •     Coconut milk
  •     Fried onions
  •     Coriander and mint leaves (Chopped) 

How to Make Shayya Biryani Recipe

  •     Heat ghee in a pan, sauté the onions with green chillies, ginger-garlic paste until the onion turns golden brown.
  •     Add turmeric and chilli powder, tomatoes and mix well with the onions.
  •     Add about 500 g of chicken and mix well so that the meat is covered with the onion gravy
  •     Add salt as per taste, and stir the meat and let it cook for a few minutes
  •     As the chicken starts cook, add about 50g of thick curd and mix well
  •     When the chicken is cooked well, add garam masala powder and finely chopped coriander, and mix them with the meat and let the gravy simmer.
  •     Add one cup of freshly made coconut milk and fried onions
  •     Add the vermicelli, ghee, top it with some freshly mint leaves, and 1tbsp of rose or kewra water. 
  •     Cover the pan and let everything cook for 10-12 minutes.
  •     Remove the lid and enjoy the delicious Shayya Biryani.
